Quality of Beef Grading Higher +39%

Prime grading in beef is up to 10 percent, compared to 3 percent as little as 10 years ago. Retailers are now carrying prime beef cuts every day. Programs like Certified Angus Beef saw its pounds sold up 9.8 percent nationally, with AWG being up 18 percent in 2018 vs. 2017. Consumer demand is up for premium beef by more than 39 percent year over year, according to a Progressive Grocer report in 2018.

Transparency in Meat Proteins +14%

Antibiotic-free has seen a dramatic rise in its share of protein bought. Beef is up 16 percent, chicken 28 percent, pork 22 percent and turkey up 10 percent. “Grass-fed” and “no antibiotics ever” beef is up 14 percent over last year, while conventional meat proteins are down overall by 1 percent.

Plant-Based Proteins +23%

From 2007-2018, $17.1 billion has been invested in plant-based proteins, with $13 billion coming in the last two years with brands like Beyond Meat and others. According to Nielsen data, plant-based retail sales rose 23 percent in 2018.

Value-Added Products +67%

Marinated, kabobs, gourmet burgers, and stuffed and seasoned items have grown in consumer demand by 67 percent in the last three years, according to Progressive Grocer. These items should be displayed in meat cases every day for extra sales and profit.
