By reducing the deli case by 4 feet and replacing it with an 8-foot service deli case with additional cold self-service below, you can maintain selling power while giving you the ability to offer grab-and-go deli products. With the 4four feet gained, you can then install a sandwich prep station with cold self-service below that can serve as a place for made-to-order sandwiches as well as pre-made grab-and-go sandwiches.

In the photos seen, we show a store where we were able to rearrange the equipment under the ventilation hood and gain enough room for an electric smoker. The addition of a smoker now allows for a variety of additional smoked meat products that you can sell hot or pack cold to qualify for EBT.

All of these additional value-added offerings are well beyond anything some of your key value channel retailers are able to do, and you are able to do it with the current space you have.
